Sheet Pan Chicken Sausage, Veggies, And Spicy Yogurt Dipping Sauce: Quick & Easy Aldi Lunch Prep
Simple sheet pan. Lots of veggies. BUT, don’t be fooled thinking roasted veggies are boring. The protein-packed spicy yogurt dressing makes this meal SO good. This easy lunch prep recipe is a love note to roasted veggies and low maintenance meal prep. This is my go-to when I already have a ton of dishes in the sink, and need something that’s super easy, but will still be a full, yummy, and warm meal during the week.
Some highlights about this recipe:
- It’s a sheet pan meal, which means minimal dishes and clean up. I purposefully didn’t write one sheet pan because I generally use two so that I can spread out the veggies and sausage more to get a better caramelization all around.
- The veggies I choose to use are the ones I usually use, but you can also sub in or exchange any veggies that do well roasted. Extra points for you if you decide to use seasonal veggies! Some ideas you could sub out for might be: red potatoes, asparagus, butternut squash, radishes, etc.
- The real kicker to this for lunch meal prep that makes a real difference is the greek yogurt-based spicy sauce. I hesitate to call it an aioli because it’s not one, but it’s *close* with just yogurt, lemon juice, and seasoning.

Tips For This Recipe:
I’d recommend prepping your veggies and sausage while you preheat your oven. If you’re quick with peeling and dicing, the timing should work out really well. If you don’t want to be under the gun for timing, I’d recommend chopping everything first, then turning on your oven.
For oil for the veggies, you’ve got lots of options. I usually drizzle avocado oil over everything and toss it around to coat. You could do olive oil as well for more flavor, but I tend to prefer a neutral oil. Or, you could also do a spray oil over top of everything.

Ingredients
For The Sheet Pan Sausage & Veggies
- 1 package Simply Nature Organic Mild Sweet Italian Chicken Sausage
- 1 head cauliflower
- 1 head broccoli
- 1 red onion
- 4 small sweet potatoes
- 4 bulk carrots
For The Spicy Yogurt Dipping Sauce
- 2 cups unflavored unsweetened greek yogurt
- 1/2 lemon
- 1/8 tsp salt
- 1/8 tsp pepper
- 1/8 tsp cayenne red pepper
Instructions
For Roasted Veggies & Sausage
- Preheat your oven to 400 degrees. (Tip: do this after your veggie and sausage prep if you're new to chopping and peeling veggies to save energy/gas!)
- Peel your sweet potatoes and carrots. Then dice and chop all your veggies into bite-size pieces (about 1 inch or smaller).
- Cut all 5 chicken sausage links into small pieces to roast.
- Put all your veggies and sausage on a sheet pan (or two), drizzle or spray with your oil of choice, and season to your liking with salt and pepper.
- Roast the sausage and veggies in the oven for 25 minutes or until veggies are cooked through with some caramelization.
For The Spicy Yogurt Dipping Sauce
- Put 2 cups of greek yogurt into a small mixing bowl.
- Cut your lemon in half and juice half of the lemon into the yogurt bowl. Add the salt, pepper, and cayenne pepper. If you want less spice, do less cayenne!
- Use a small whisk or spatula to thoroughly mix. You should have enough for extra sauce after you portion out for four lunches.
Package Up Your Lunches
- Split your veggies and sausage into four equal meal prep containers. Scoop out 3 oz or a little under ¼ cup of sauce for each lunch.
