Turkey Meatballs, Greek-Inspired Side Salad & Pita Bread, Hummus

This recipe is one my easiest recipes to execute because the only cooking required is in the microwave – and just on the actual day you eat your meal, not during your meal prep! The key to this very low maintenance meal is frozen turkey meatballs. They are precooked, so you just toss them into your divided containers and throw them back into the fridge.

The *loosely* Greek-inspired portion of this meal comes together in the side salad and hummus. The side salad relies on feta cheese a really yummy dressing. The reason I share it’s “Greek-inspired” and not a legitimate Greek salad is because I always reach for the Brianna’s Homestyle Real French Vinaigrette, which obviously, is not a Greek dressing, and I don’t include olives in this salad.

For the turkey meatballs, I find mine in the freezer section of Meijer. If you look near the frozen beef meatballs at your grocery store, they likely have some turkey alternatives. Go with your heart here and find what you think you’ll enjoy. You could also easily swap this out for chicken or beef/pork meatballs. Turkey, for me, is just a personal preference for a leaner, lower-calorie option.

Ingredients
  

  • 1 bag frozen turkey meatballs
  • 2 romaine hearts
  • 2 mini cucumbers or 1 large cucumber
  • 1 package matchstick carrots
  • 1 container cherry tomatoes
  • 1 cup feta cheese
  • ½ red onion
  • 1 container Brianna's Homestyle Real French Vinaigrette
  • 1 container Stonefire naan dippers
  • 1 container your favorite hummus

Instructions
 

  • Wash and chop your romaine.
  • Chop up your cucumber, red onion, and slice your cherry tomatoes in half.
  • In 4 equal portions, prepare your salads with: romaine, carrots, cucumber, red onion, cherry tomatoes, ¼ cup of feta cheese. Portion out your hummus into four equal portions. Split up your naan dippers into four equal portions. Give yourself 4-5 meatballs per meal. Lastly, pour yourself 2 tablespoons of salad dressing per portion.
